Dip into this Delicious Squash Delight

I know it may seem that I am on a squash kick right now and that is because I guess I am. It is in season, it tastes sooo good and it is healthy so why not!? And they are everywhere right now and so I cannot help but continue to experiment with recipes. Today I offer up one that is totally delish and given to me by my sweet friend Laurie. This recipe is wonderful and I promise this will be the last squash recipe for a while. …maybe

ACORN SQUASH DIP
3/4 large acorn squash, halved and seeded
3 tbsp plain organic yogurt
3 tbsp finely diced sweet onion
2 tsp honey, preferably local organic
3 tsp balsamic vinegar
2 tsp lemon juice and a dab of organic rind (of course)
1/4 tsp ground cumin seed
1/8 tsp ground paprika
1 tsp garlic and herb seasoning
Dash of cayenne

Bake squash, covered, at 350 degrees for 45 minutes or until tender.  Allow to cool enough to handle. Scoop out flesh and discard the skin.  Mash all ingredients together, add salt & pepper to taste.  Serve dip warm or at room temp. with bread, crackers, flackers (www.flackers.com) or vegetables.
