Soup for the soul

Rich, warming, delicious, nutritious, you gotta try this! It is one of my favorite recipes right now and since squash is in, why not.

Soup for the soul Recipe

1 medium butternut squash

2 carrots chopped

1 T olive oil

1 onion chopped (source of polyphenols and other potent flavinoids-antioxidants)

4 cups of organic soy milk or almond milk or organic milk or if you don’t want any milk soak 2 cups of cashews in water for 4-6 hours and blend

1tsp nutmeg, optional 1 tsp ground ginger

2 T maple syrup or local organic honey

2 cups of quinoa 9 Great protein source) or brown rice (full of b vitamins and fiber and a little protein)

Steam squash and carrots or I like to cut in half and bake at 400 for one hour (also may add kale as well)

Heat oil in skillet and Add onions and saute for 2 minutes, add ginger

Drain carrots and sqaush. If you baked them, scoop squash out and place in food processor with ‘milk’ and nutmeg and sweetener. Blend

Transfer all into soup pot, add onions and rice or quinoa

Simmer for five minutes…enjoy
